Groundnuts

Groundnut kernel contains about 47-49 % oil and 20 % protein. Its kernel as a whole is highly digestible. The kernels are eaten as either roasted or fried and salted. The biological value of the groundnut protein is among the highest of the vegetable protein and equals that of casein.
